Mohave Indians call themselves Pipa Aha Macay – ‘The People by the River.’ And right across the Colorado River in Laughlin is Avi – an Indian Casino famous for slots, table games, sports book, roulette, and the players’ club. You never know what folks are going to bring to a Potluck dinner. Will it be a dozen bags of potato chips and no dip? Why take a chance? Bring something delicious that will ‘wow’ the crowd of party-goers.
Did you know that like other Native Americans, the Mojave people grew and consumed corn long before Columbus arrived in 1492? It’s true! So enjoy the native food of Arizona and try Spoon Bread – an American dish similar to cornbread – your RV neighbors will love it!
Spoon Bread is something like a soufflé. It’s a moist quick bread that needs to be scooped with a spoon-hence its name.
SWEET CORN SPOON BREAD
- 1 (8.5-ounce) package JIFFY Corn Muffin Mix
- 1 (14.75-ounce) can cream style corn
- 1 (15-ounce) can whole kernel corn, drained
- ½ cup (1 stick) butter, melted
- 1 cup sour cream
- 3 eggs
- ½ teaspoon salt
Preheat your RV oven to 375° and lightly grease a 2-quart casserole dish with nonstick cooking spray. In a large bowl, combine the ingredients and mix well. Pour the mixture into the casserole dish. Bake 35 to 40 minutes, or until the spoon bread is set.
